Ο Γιώργος Πάλλης έλαβε το Πτυχίο (2001) και το Διδακτορικό του (2006) από το Τμήμα Πληροφορικής του Αριστοτελείου Πανεπιστημίου Θεσσαλονίκης. Αυτή τη στιγμή είναι Καθηγητής στο Τμήμα Πληροφορικής του Πανεπιστημίου Κύπρου. Τα ερευνητικά του ενδιαφέροντα περιλαμβάνουν την Κατανεμημένη και Διαδικτυακή Υπολογιστική με ιδιαίτερη έμφαση στην Ανάλυση Μεγάλων Δεδομένων (Big Data Analytics) και την Υπολογιστική στο Υπολογιστικό Νέφος, την Περιφέρεια και την Ομίχλη (Cloud/Edge/Fog Computing).

Ο Δρ. Πάλλης είναι ένας από τους διευθυντές του Μεταπτυχιακού Προγράμματος Επιστήμης Δεδομένων στο Πανεπιστήμιο Κύπρου. Είναι κύριος ερευνητής σε έργα που χρηματοδοτούνται από την Ευρωπαϊκή Επιτροπή, το Ίδρυμα Έρευνας και Καινοτομίας Κύπρου και τη βιομηχανία (π.χ. Google), έχοντας συνολική χρηματοδότηση που υπερβαίνει τα 5,5 εκατομμύρια ευρώ.

Ο Δρ. Πάλλης έχει δημοσιεύσει πάνω από 100 άρθρα σε διεθνή επιστημονικά περιοδικά (π.χ. IEEE TKDE, IEEE TCC, IEEE TSC, ACM TOIT, Scientific Reports, CACM, IEEE Internet Computing) και συνέδρια (π.χ. INFOCOM, IPDPS, ICDCS, SEC, IoTDi, ICWSM, BIG DATA) και έχει συμμετάσχει σε δύο διεθνή πρότυπα του γερμανικού οργανισμού DIN (German Institute for Standardization). 

Ο Δρ. Πάλλης έχει διατελέσει PC Co-chair στα συνέδρια CloudCom 2018 και CCGrid 2019, καθώς και Γενικός Πρόεδρος στα ACM/IEEE SEC 2024 και IEEE IC2E 2024. Έχει επίσης υπηρετήσει σε πολυάριθμες επιστημονικές και οργανωτικές επιτροπές διεθνών συνεδρίων (όπως WWW, ICDCS, CONEXT, BIG DATA), ενώ έχει λάβει πολλά βραβεία καλύτερης δημοσίευσης: IEEE CloudCom 2024, IEEE/ACM UCC 2023, IEEE IoTDi 2022, IEEE ISCC 2022, IEEE BIG DATA 2016, ICSOC 2014 και το βραβείο καλύτερης επίδειξης στο ACM/IEEE Symposium on Edge Computing.

Το 2019 υπηρέτησε ως guest editor για το Edge Computing στο περιοδικό Proceedings of the IEEE, ένα από τα πιο έγκριτα περιοδικά του χώρου. Ο Δρ. Πάλλης περιλαμβάνεται στη λίστα με το κορυφαίο 2% των επιστημόνων παγκοσμίως, όπως δημοσιεύθηκε από το Πανεπιστήμιο Stanford, και είναι Golden Core Member της IEEE Computer Society. Διετέλεσε Editor-in-Chief του περιοδικού IEEE Internet Computing (2019–2023) και Associate Editor στο IEEE Transactions on Cloud Computing. Σήμερα είναι Editor-in-Chief Emeritus στο IEEE Internet Computing και Associate Editor στο περιοδικό Computing (Springer).
